Stress-Free Summer Meals Start with THIS!

Summers are always so busy, so I’ve been leaning hard on lazy meals that keep on giving.

My Spinach Almond Pesto is one of those recipes we make on repeat—it’s super quick to throw together, packed with flavor, and somehow makes whatever you toss it on feel like a whole meal.

I love it with pasta for the easiest weeknight dinner. And if I have the extra 10 minutes, I sear some chicken for added protein.

But honestly? Most of the time I just pair it with store-bought rotisserie chicken...

Why do extra work when you can do the bare minimum? 🤣

Then the leftover pesto can turn into a whole other meal next—Creamy Pesto Alfredo Pasta. It’s perfect on its own, with more chicken, or with a quick pan-seared salmon when we want to mix things up.

We’ve been rotating between these combos and every day still feels a little different.

One sauce, a few easy meals, zero stress. That’s the summer energy I’m here for.
